Ingredients:

  • 1 lb sirloin steak, thinly sliced against the grain
  • 1 tsp baking soda
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1/4 cup oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp toasted sesame oil
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup sugar snap peas
  • 2 tbsp canola oil

Instructions:

  1. Cut the sirloin into thin strips (approximately 1/8 inch thick) across the grain.
  2. In a bowl, toss the beef with baking soda, 1 tbsp soy sauce, cornstarch, and 1 tbsp vegetable oil.
  3. Let the beef mixture sit and marinate for 15 minutes.
  4. Heat a wok or large skillet on high heat until a drop of water evaporates instantly. Add 1 tbsp of oil and sear the beef in a single layer for 2 minutes until a mahogany crust forms.
  5. Flip the beef and sear for another 30-60 seconds, then remove immediately to a plate.
  6. Add the remaining 1 tbsp of oil to the pan and stir fry carrots and broccoli for 3 minutes, then add snap peas and cook until bright and crisp.
  7. Return the beef and juices to the pan. Pour in the whisked sauce (oyster sauce, 2 tbsp soy sauce, brown sugar, sesame oil, ginger, and garlic).
  8. Toss rapidly for 1-2 minutes until the sauce bubbles and thickens into a glossy coating.
