Ingredients:
- 1 lb sirloin steak, thinly sliced against the grain
- 1 tsp baking soda
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- 1/4 cup oyster sauce
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp toasted sesame oil
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup sugar snap peas
- 2 tbsp canola oil
Instructions:
- Cut the sirloin into thin strips (approximately 1/8 inch thick) across the grain.
- In a bowl, toss the beef with baking soda, 1 tbsp soy sauce, cornstarch, and 1 tbsp vegetable oil.
- Let the beef mixture sit and marinate for 15 minutes.
- Heat a wok or large skillet on high heat until a drop of water evaporates instantly. Add 1 tbsp of oil and sear the beef in a single layer for 2 minutes until a mahogany crust forms.
- Flip the beef and sear for another 30-60 seconds, then remove immediately to a plate.
- Add the remaining 1 tbsp of oil to the pan and stir fry carrots and broccoli for 3 minutes, then add snap peas and cook until bright and crisp.
- Return the beef and juices to the pan. Pour in the whisked sauce (oyster sauce, 2 tbsp soy sauce, brown sugar, sesame oil, ginger, and garlic).
- Toss rapidly for 1-2 minutes until the sauce bubbles and thickens into a glossy coating.
