Ingredients:

  • 2 lbs chicken drumsticks (8-10 pieces), bone-in, skin-on
  • 1 tbsp avocado oil
  • 1.5 tsp aluminum-free baking powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 0.5 tsp freshly cracked black pepper
  • 0.5 tsp dried oregano

Instructions:

  1. Pat the chicken drumsticks extremely dry using paper towels to ensure maximum crispiness.
  2. In a large mixing bowl, whisk together the baking powder, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and dried oregano.
  3. Drizzle the chicken drumsticks with avocado oil and toss to coat evenly.
  4. Toss the oiled chicken in the spice blend until every crevice is thoroughly coated. Allow the chicken to sit at room temperature for 10 minutes to allow the dry-brine effect to occur.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the drumsticks in the air fryer basket in a single layer, ensuring they are not touching for optimal airflow.
  7. Air fry for 20 minutes, flipping the drumsticks halfway through the cooking time, until the internal temperature reaches 165°F and the skin is golden brown and shattering.
