Ingredients:

  • 2 ½ cups (315g) all-purpose flour
  • 1 cup (225g) unsalted butter, chilled and cubed
  • 1 teaspoon (6g) salt
  • 1 tablespoon (12g) granulated sugar
  • ¼ cup (60ml) ice water
  • 8 medium Granny Smith apples, peeled, cored, and sliced
  • ½ cup (100g) white granulated sugar
  • ½ cup (110g) packed brown sugar
  • 1 tablespoon (8g) ground cinnamon
  • ¼ teaspoon (1g) salt
  • ½ cup (113g) unsalted butter, melted
  • 3 tablespoons (25g) all-purpose flour
  • ½ cup (100g) white sugar

Instructions:

  1. Peel and core the apples. Cut each apple into quarters lengthwise, then slice into pieces 1/4 to 1/2 inch thick.
  2. In a large bowl, combine apple slices with white sugar, brown sugar, cinnamon, and salt. Toss until coated and let sit for 10 minutes to draw out excess moisture.
  3. Roll out half of the chilled dough and press it evenly into a 9-inch pie dish.
  4. Pour the apple mixture into the crust, mounding them slightly in the center.
  5. Roll out the second half of the dough, cut into strips, and weave a lattice pattern across the top. Trim the edges and crimp to seal.
  6. Whisk melted butter, flour, and sugar together, then gently pour the liquid over the lattice crust.
  7. Place the pie in a preheated oven at 425°F (220°C) for the initial high-heat blast to set the bottom crust, then continue baking until the crust is mahogany-colored and filling is thickened (approximately 60 minutes total cook time).
