Ingredients:
- 1.5 lbs boneless skinless chicken breasts
- 4 cups fresh baby spinach
- 1 tbsp olive oil
- 5.2 oz Boursin Garlic & Fine Herbs cheese
- 1/2 cup low-sodium chicken broth
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- salt to taste
- black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Lightly grease a 9x13 inch baking dish with olive oil.
- Pat the chicken breasts dry with a paper towel and season both sides with salt, pepper, and garlic powder.
- Scatter the spinach across the bottom of the baking dish to create a bed for the chicken.
- Place the chicken breasts on top of the greens.
- Place a generous dollop (about 1-2 tbsp) of Boursin cheese on top of each chicken breast.
- Carefully pour the chicken broth and lemon juice into the bottom of the dish, avoiding the cheese topping.
- Bake for 20–25 minutes until the cheese is bubbling and golden brown, and the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the meat rest for 5 minutes before serving.
