Ingredients:

  • 1.5 lbs boneless skinless chicken breasts
  • 4 cups fresh baby spinach
  • 1 tbsp olive oil
  • 5.2 oz Boursin Garlic & Fine Herbs cheese
  • 1/2 cup low-sodium chicken broth
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • salt to taste
  • black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a 9x13 inch baking dish with olive oil.
  3. Pat the chicken breasts dry with a paper towel and season both sides with salt, pepper, and garlic powder.
  4. Scatter the spinach across the bottom of the baking dish to create a bed for the chicken.
  5. Place the chicken breasts on top of the greens.
  6. Place a generous dollop (about 1-2 tbsp) of Boursin cheese on top of each chicken breast.
  7. Carefully pour the chicken broth and lemon juice into the bottom of the dish, avoiding the cheese topping.
  8. Bake for 20–25 minutes until the cheese is bubbling and golden brown, and the chicken reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven and let the meat rest for 5 minutes before serving.
