Ingredients:

  • 2 cups (240g) All-purpose flour
  • 1/2 cup (60g) Unflavored Whey-Casein protein powder blend
  • 1 tbsp Baking powder
  • 1 tsp Garlic powder
  • 1/2 tsp Sea salt
  • 1 cup (225g) Low-fat cottage cheese, blended smooth
  • 1/2 cup (120g) Plain non-fat Greek yogurt
  • 2 Large eggs
  • 1/4 cup (57g) Cold unsalted butter, grated
  • 1 cup (115g) Sharp cheddar cheese, shredded
  • 1/2 cup (100g) Cooked turkey sausage crumbles

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, protein powder, baking powder, garlic powder, and sea salt until no clumps remain.
  3. Use a box grater to grate the cold unsalted butter directly into the flour mixture. Gently toss to coat the butter shreds in flour.
  4. In a blender, process the cottage cheese until completely smooth. Transfer to a medium bowl and whisk in the Greek yogurt and eggs.
  5. Fold the wet ingredients into the dry ingredients. Before the flour is fully incorporated, fold in the shredded cheddar cheese and turkey sausage crumbles.
  6. Using a large cookie scoop or a 1/4 cup measure, drop 12 even portions of dough onto the prepared baking sheet.
  7. Bake for 18–20 minutes, or until the tops are golden-brown and the internal temperature reaches 200°F.
