Ingredients:
- 2 cups (240g) All-purpose flour
- 1/2 cup (60g) Unflavored Whey-Casein protein powder blend
- 1 tbsp Baking powder
- 1 tsp Garlic powder
- 1/2 tsp Sea salt
- 1 cup (225g) Low-fat cottage cheese, blended smooth
- 1/2 cup (120g) Plain non-fat Greek yogurt
- 2 Large eggs
- 1/4 cup (57g) Cold unsalted butter, grated
- 1 cup (115g) Sharp cheddar cheese, shredded
- 1/2 cup (100g) Cooked turkey sausage crumbles
Instructions:
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, protein powder, baking powder, garlic powder, and sea salt until no clumps remain.
- Use a box grater to grate the cold unsalted butter directly into the flour mixture. Gently toss to coat the butter shreds in flour.
- In a blender, process the cottage cheese until completely smooth. Transfer to a medium bowl and whisk in the Greek yogurt and eggs.
- Fold the wet ingredients into the dry ingredients. Before the flour is fully incorporated, fold in the shredded cheddar cheese and turkey sausage crumbles.
- Using a large cookie scoop or a 1/4 cup measure, drop 12 even portions of dough onto the prepared baking sheet.
- Bake for 18–20 minutes, or until the tops are golden-brown and the internal temperature reaches 200°F.
