Ingredients:
- 1 lb fresh strawberries, hulled and halved
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/2 cup plain Greek yogurt
- 1/4 cup heavy cream
- 3 tbsp honey
- 1 pinch fine sea salt
Instructions:
- Wash the strawberries thoroughly, remove the green hulls, and halve the berries.
- Place the halved strawberries, lemon juice, and vanilla extract into a high-speed blender.
- Pulse the berries until broken down, then blend on high for 60 seconds until completely smooth.
- Add honey and a pinch of salt, then blend for an additional 30 seconds.
- Add the Greek yogurt and heavy cream to the blender. Blend on a medium-low setting just until incorporated to avoid creating excess foam.
- Pour the mixture through a fine-mesh sieve into a glass bowl, using a spatula to push the puree through and remove the seeds.
- Cover and refrigerate for 2 hours before serving in chilled bowls.
