Ingredients:

  • 1 lb fresh strawberries, hulled and halved
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup plain Greek yogurt
  • 1/4 cup heavy cream
  • 3 tbsp honey
  • 1 pinch fine sea salt

Instructions:

  1. Wash the strawberries thoroughly, remove the green hulls, and halve the berries.
  2. Place the halved strawberries, lemon juice, and vanilla extract into a high-speed blender.
  3. Pulse the berries until broken down, then blend on high for 60 seconds until completely smooth.
  4. Add honey and a pinch of salt, then blend for an additional 30 seconds.
  5. Add the Greek yogurt and heavy cream to the blender. Blend on a medium-low setting just until incorporated to avoid creating excess foam.
  6. Pour the mixture through a fine-mesh sieve into a glass bowl, using a spatula to push the puree through and remove the seeds.
  7. Cover and refrigerate for 2 hours before serving in chilled bowls.
