Ingredients:

  • 1 cup (225g) unsalted butter, melted
  • ¾ cup (150g) coconut sugar or light brown sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 2 tbsp (30g) unsweetened apple sauce
  • ¾ cup (65g) Dutch-processed cocoa powder
  • 1 cup (125g) almond flour
  • ½ tsp (3g) sea salt
  • ½ tsp (2g) baking powder
  • 1 cup (170g) dark chocolate chips (70% cocoa or higher)

Instructions:

  1. Preheat your oven to 325°F (165°C). Line your 9x13 inch pan with parchment paper, leaving an overhang on the sides.
  2. Whisk the melted butter and sugar together until combined. Add the eggs, vanilla, and apple sauce. Beat vigorously for 2 minutes.
  3. Sift in the cocoa powder, almond flour, salt, and baking powder. Use a spatula to fold the ingredients together until just combined. Fold in the dark chocolate chips last.
  4. Spread the batter evenly into the pan. Bake for 30–35 minutes until the edges are firm and slightly pulled away from the sides, but the center still has a slight jiggle.
  5. Remove from the oven and let the pan cool completely on a wire rack for at least 1 hour to allow the structure to set.
