Ingredients:
- 3 cups peeled and thinly sliced apples
- 0.04 cup granulated sugar
- 1 tsp ground cinnamon
- 1 tsp lemon juice
- 1 cup all-purpose flour
- 0.75 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp kosher salt
- 1 large egg
- 0.5 cup unsalted butter, melted and cooled
- 0.75 cup whole milk
Instructions:
- Preheat your oven to 180°C (350°F). Lightly grease your 9 inch pie dish with a bit of butter or non stick spray.
- In a medium bowl, toss your 3 cups of sliced apples with 2 tbsp sugar, 1 tsp cinnamon, and 1 tsp lemon juice. Arrange them in an even layer at the bottom of your prepared dish. Make sure they are spread flat to create a stable foundation.
- In your large bowl, whisk together 1 cup flour, 0.75 cup sugar, 1 tsp baking powder, and 0.5 tsp salt.
- Gradually pour in 0.75 cup milk, 1 large egg, and the 0.5 cup melted (and cooled) butter. Whisk until just combined and smooth.
- Slowly pour the batter over the apples. Do not stir! Use a spatula to gently spread the batter to the edges if needed.
- Place in the center of the oven and bake for 45 minutes until the top is deep golden and the edges are bubbling.
- Remove from the oven and let it sit on a wire rack for at least 10 minutes. This is when the crust firms up. If you cut it too soon, the 'crazy' layers will collapse into a puddle.
