Ingredients:

  • 3 cups peeled and thinly sliced apples
  • 0.04 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp lemon juice
  • 1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp kosher salt
  • 1 large egg
  • 0.5 cup unsalted butter, melted and cooled
  • 0.75 cup whole milk

Instructions:

  1. Preheat your oven to 180°C (350°F). Lightly grease your 9 inch pie dish with a bit of butter or non stick spray.
  2. In a medium bowl, toss your 3 cups of sliced apples with 2 tbsp sugar, 1 tsp cinnamon, and 1 tsp lemon juice. Arrange them in an even layer at the bottom of your prepared dish. Make sure they are spread flat to create a stable foundation.
  3. In your large bowl, whisk together 1 cup flour, 0.75 cup sugar, 1 tsp baking powder, and 0.5 tsp salt.
  4. Gradually pour in 0.75 cup milk, 1 large egg, and the 0.5 cup melted (and cooled) butter. Whisk until just combined and smooth.
  5. Slowly pour the batter over the apples. Do not stir! Use a spatula to gently spread the batter to the edges if needed.
  6. Place in the center of the oven and bake for 45 minutes until the top is deep golden and the edges are bubbling.
  7. Remove from the oven and let it sit on a wire rack for at least 10 minutes. This is when the crust firms up. If you cut it too soon, the 'crazy' layers will collapse into a puddle.
