Ingredients:

  • 2 Large English Cucumbers, sliced into 1/8-inch rounds
  • 0.5 Medium Red Onion, sliced into paper-thin half-moons
  • 1 tbsp Kosher salt
  • 0.5 cup Full-fat Sour Cream
  • 2 tbsp Avocado Oil Mayonnaise
  • 1 tbsp Fresh Lemon Juice
  • 1 tsp Apple Cider Vinegar
  • 2 tbsp Fresh Dill, finely chopped
  • 0.5 tsp Garlic Powder
  • 0.25 tsp Cracked Black Pepper
  • 1 tsp Granulated Monk Fruit

Instructions:

  1. Place the sliced English cucumbers and red onions in a large colander set over a bowl. Toss thoroughly with the Kosher salt.
  2. Allow the vegetables to sit for 30 minutes to extract excess moisture through osmosis.
  3. Rinse the cucumber and onion mixture quickly under cold water to remove surface salt.
  4. Pat the vegetables completely dry using paper towels or a clean flour sack towel to ensure the dressing adheres.
  5. In a separate small bowl, whisk together the sour cream, avocado oil mayonnaise, lemon juice, apple cider vinegar, monk fruit, dill, garlic powder, and black pepper until smooth.
  6. Combine the dried vegetables with the dressing and toss gently to coat. Chill before serving for maximum crispness.
