Ingredients:
- 2 lbs boneless skinless chicken thighs, trimmed of excess fat
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 tsp smoked paprika
- 6 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and julienned
- 1 tsp dried Italian seasoning
- 1/2 tsp crushed red pepper flakes
- 1 cup low-sodium chicken bone broth
- 4 oz reduced-fat cream cheese (Neufchâtel), cubed and softened
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach, packed
- 1 tbsp cornstarch
- 1 tbsp cold water
Instructions:
- Season the chicken. Rub 2 lbs of chicken thighs with salt, pepper, and smoked paprika. Place them in the bottom of the slow cooker until the bottom is fully covered.
- Whisk the aromatics. In a small bowl, combine bone broth, 6 cloves of minced garlic, Italian seasoning, and red pepper flakes. Whisk until the spices are distributed.
- Combine the ingredients. Pour the broth mixture over the chicken. Scatter 1/2 cup of julienned sun dried tomatoes over the top until they are evenly spread. Note: Don't stir too much; you want the tomatoes to sit on top of the meat initially.
- Braise the meat. Cover and cook on LOW for 6 hours. Until the chicken is tender and reaches 165°F (74°C). Resist the urge to peek; every time you lift the lid, you lose 15 minutes of heat.
- Adjust the temperature. Switch the slow cooker to the HIGH setting. This is necessary to activate the cornstarch slurry and melt the cheese efficiently.
- Create the slurry. In a small bowl, whisk 1 tbsp cornstarch and 1 tbsp cold water until a smooth white liquid forms.
- Thicken the sauce. Stir the slurry and 4 oz of cubed Neufchâtel into the slow cooker. Stir gently until the cheese has completely melted into the broth.
- Add the cheese. Fold in 1/2 cup of Parmesan cheese. Whisk lightly until the sauce looks glossy and thick.
- Wilt the greens. Add 2 cups of fresh baby spinach. Cover and cook for 15 minutes until the spinach is vibrant green and limp.
- Final check. Stir one last time to ensure the sauce has reached your desired thickness. Serve immediately while the sauce is still piping hot.
