Ingredients:
- 6 large (approx. 3 lbs / 1.36kg) Granny Smith or Honeycrisp apples, peeled and sliced
- ½ cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) old-fashioned rolled oats
- 1 cup (125g) all-purpose flour
- 1 cup (200g) packed light brown sugar
- ½ tsp (3g) salt
- ¾ cup (170g) unsalted butter, chilled and cubed
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease your 9x9 inch baking dish.
- In a large bowl, toss the sliced apples with lemon juice and vanilla extract to prevent browning.
- Sprinkle in the granulated sugar, cornstarch, and cinnamon. Toss until every apple slice is evenly coated in the spice mixture.
- Transfer the mixture to the baking dish, spreading the apples evenly to ensure consistent cooking.
- In a separate bowl, whisk together the oats, flour, brown sugar, and salt.
- Add the chilled, cubed butter. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized lumps of butter remaining.
- Scatter the topping evenly over the apples without pressing it down.
- Bake for 40–50 minutes until the topping is a deep mahogany-gold and the apple juices bubble thickly around the edges.
- Remove from the oven and let it rest for 10 minutes to allow the filling to set.
