Ingredients:
- 2 English cucumbers, thinly sliced (approx. 1 lb / 450g)
- 1/2 small red onion, thinly sliced (approx. 2 oz / 60g)
- 2 tbsp fresh dill or parsley, chopped (8g)
- 1/4 cup apple cider vinegar or white vinegar (60ml)
- 1 tbsp granulated sugar (12g)
- 1/2 tsp salt (3g)
- 1/4 tsp black pepper (1g)
Instructions:
- Slice the English cucumbers into thin rounds and the red onion into paper thin half moons.
- Place both the cucumber and onion slices in a large mixing bowl.
- In a small jar or bowl, combine the vinegar, sugar, salt, and pepper.
- Shake or whisk the dressing vigorously until the sugar granules have completely dissolved.
- Pour the dressing over the cucumbers and onions.
- Toss gently with a spoon until every slice is coated.
- Fold in the chopped fresh dill or parsley.
- Serve immediately or let it sit for 5 minutes to let the flavors meld.
