Ingredients:

  • 2 English cucumbers, thinly sliced (approx. 1 lb / 450g)
  • 1/2 small red onion, thinly sliced (approx. 2 oz / 60g)
  • 2 tbsp fresh dill or parsley, chopped (8g)
  • 1/4 cup apple cider vinegar or white vinegar (60ml)
  • 1 tbsp granulated sugar (12g)
  • 1/2 tsp salt (3g)
  • 1/4 tsp black pepper (1g)

Instructions:

  1. Slice the English cucumbers into thin rounds and the red onion into paper thin half moons.
  2. Place both the cucumber and onion slices in a large mixing bowl.
  3. In a small jar or bowl, combine the vinegar, sugar, salt, and pepper.
  4. Shake or whisk the dressing vigorously until the sugar granules have completely dissolved.
  5. Pour the dressing over the cucumbers and onions.
  6. Toss gently with a spoon until every slice is coated.
  7. Fold in the chopped fresh dill or parsley.
  8. Serve immediately or let it sit for 5 minutes to let the flavors meld.
