Ingredients:

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 0.5 cup unsweetened cocoa powder
  • 1 cup buttermilk
  • 2 large eggs
  • 1.5 cups vegetable oil
  • 1 tsp white distilled vinegar
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring gel
  • 8 oz full-fat cream cheese
  • 0.5 cup unsalted butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp heavy cream

Instructions:

  1. Sift together the flour, sugar, baking soda, salt, and cocoa powder in a large bowl.
  2. In a separate bowl, beat the vegetable oil, buttermilk, eggs, vinegar, vanilla, and red food coloring until smooth.
  3. Gradually pour the wet ingredients into the dry and mix on medium-low speed until just combined; do not overmix.
  4. Grease a 9x13 inch baking pan, pour in the batter, and smooth the top with a spatula.
  5. Bake in a preheated 350°F (175°C) oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Beat softened cream cheese and butter together until pale and fluffy.
  8. Gradually add powdered sugar one cup at a time on low speed, then increase to medium-high until pillowy.
  9. Stir in vanilla and heavy cream, then spread a thick layer over the cooled cake.
