Ingredients:
- 2.5 cups all-purpose flour
- 1.5 cups granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 0.5 cup unsweetened cocoa powder
- 1 cup buttermilk
- 2 large eggs
- 1.5 cups vegetable oil
- 1 tsp white distilled vinegar
- 1 tsp vanilla extract
- 2 tbsp red food coloring gel
- 8 oz full-fat cream cheese
- 0.5 cup unsalted butter
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 1 tbsp heavy cream
Instructions:
- Sift together the flour, sugar, baking soda, salt, and cocoa powder in a large bowl.
- In a separate bowl, beat the vegetable oil, buttermilk, eggs, vinegar, vanilla, and red food coloring until smooth.
- Gradually pour the wet ingredients into the dry and mix on medium-low speed until just combined; do not overmix.
- Grease a 9x13 inch baking pan, pour in the batter, and smooth the top with a spatula.
- Bake in a preheated 350°F (175°C) oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Beat softened cream cheese and butter together until pale and fluffy.
- Gradually add powdered sugar one cup at a time on low speed, then increase to medium-high until pillowy.
- Stir in vanilla and heavy cream, then spread a thick layer over the cooled cake.
