Ingredients:
- 4 medium Honeycrisp or Granny Smith apples (approx. 560g)
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 2 tbsp water or apple cider
- 1/2 cup rolled oats
- 2 tbsp almond butter
- 2 tbsp pure maple syrup
- 1/4 tsp sea salt
- 1/2 tsp ground cinnamon
Instructions:
- Preheat your oven to 375°F (190°C). Wash the apples and remove the cores, leaving the bottom intact to create a bowl. Rub the cut edges with lemon juice to prevent browning and sprinkle the insides with cinnamon.
- In a small bowl, stir together the rolled oats, almond butter, maple syrup, sea salt, and cinnamon until the oats are fully coated in a thick, sticky paste.
- Place the apples in a 9x9 inch baking dish and pour water or apple cider into the bottom of the pan to prevent sticking.
- Heap the oat mixture into the center of each apple, pressing down slightly.
- Bake for 40–45 minutes until the apples are tender when pierced with a fork and the topping is a deep golden brown.
