Ingredients:

  • 4 medium Honeycrisp or Granny Smith apples (approx. 560g)
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 2 tbsp water or apple cider
  • 1/2 cup rolled oats
  • 2 tbsp almond butter
  • 2 tbsp pure maple syrup
  • 1/4 tsp sea salt
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 375°F (190°C). Wash the apples and remove the cores, leaving the bottom intact to create a bowl. Rub the cut edges with lemon juice to prevent browning and sprinkle the insides with cinnamon.
  2. In a small bowl, stir together the rolled oats, almond butter, maple syrup, sea salt, and cinnamon until the oats are fully coated in a thick, sticky paste.
  3. Place the apples in a 9x9 inch baking dish and pour water or apple cider into the bottom of the pan to prevent sticking.
  4. Heap the oat mixture into the center of each apple, pressing down slightly.
  5. Bake for 40–45 minutes until the apples are tender when pierced with a fork and the topping is a deep golden brown.
