Ingredients:

  • 3 large Granny Smith or Honeycrisp apples (approx. 1 lb / 450g)
  • 1 tsp ground cinnamon
  • 1 tsp lemon juice
  • 1/3 cup rolled oats
  • 2 tbsp creamy almond butter
  • 1 tbsp pure maple syrup
  • 1 pinch sea salt
  • 1/4 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Core the apples, removing the center seeds and leaving a ½ inch (1.25cm) border at the bottom to ensure the apple doesn't leak.
  3. Drizzle the lemon juice inside the cavities and sprinkle with cinnamon.
  4. In a small bowl, combine the rolled oats, almond butter, maple syrup, salt, and cinnamon.
  5. Stir until the oats are fully coated and the mixture forms small, clumpy pebbles.
  6. Spoon the mixture into the center of each apple, pressing down firmly with a spoon to pack the filling.
  7. Place the stuffed apples in a baking dish. Pour 2 tbsp (30ml) of water into the bottom of the dish to create steam.
  8. Bake for 40–45 minutes until the apples are tender.
