Ingredients:

  • 4 medium Honeycrisp or Granny Smith apples (approx. 720g)
  • 2 tbsp water or unsweetened apple juice
  • 1/4 cup rolled oats (20g)
  • 1 tsp ground cinnamon (2g)
  • 1 tbsp maple syrup (15g)
  • 1 tbsp melted coconut oil (14g)
  • 1/4 tsp ground nutmeg (1g)
  • 1 pinch sea salt

Instructions:

  1. Wash the apples and remove the cores using a corer. Note: Leave 1/2 inch of the bottom to hold the filling.
  2. Pat the outside of the apples dry with a towel. Note: Wet skins steam instead of roasting.
  3. Mix rolled oats, cinnamon, maple syrup, melted coconut oil, nutmeg, and salt in a bowl.
  4. Stir the filling until the oats are evenly coated and look like damp sand.
  5. Spoon the oat mixture into the center of each apple. Note: Press down slightly to pack it in.
  6. Place apples in a baking dish and pour 2 tbsp of water or apple juice into the pan.
  7. Bake at 375°F (190°C) for 35-45 mins until the skin wrinkles and the fruit is tender.
  8. If using an air fryer, cook at 350°F (175°C) for 20-25 mins until the topping is toasted.
