Ingredients:
- 1 cup (245g) canned pumpkin puree
- 1/3 cup (80ml) pure maple syrup
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 2 tbsp (28g) melted coconut oil
- 2 cups (192g) superfine almond flour
- 1 tbsp (6g) pumpkin pie spice
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 1/3 cup (55g) dark chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk together the pumpkin puree, maple syrup, eggs, vanilla extract, and melted coconut oil until smooth and emulsified.
- Sift in the almond flour, pumpkin pie spice, baking soda, and salt directly over the wet mixture.
- Fold gently with a silicone spatula until no streaks of flour remain, taking care not to overmix.
- Stir in the dark chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 22–25 minutes until the edges are deep mahogany-brown and the center is set but has a slight give.
- Remove from the oven and let cool completely in the pan for at least 30 minutes before slicing.
