Ingredients:

  • 1 lb lean ground turkey (93% lean)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen corn
  • 4 cups chicken bone broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • salt to taste
  • black pepper to taste

Instructions:

  1. Heat the olive oil in a large Dutch oven or stockpot over medium-high heat.
  2. Add the ground turkey, breaking it apart with a spatula. Cook until the meat is deeply browned and no longer pink.
  3. Stir in the diced onion and garlic. Sauté for 3–5 minutes until the onions are translucent and the garlic is fragrant.
  4. Stir in the chili powder, cumin, and smoked paprika, letting the spices toast for 60 seconds.
  5. Pour in the diced tomatoes with juice, drained black beans, drained kidney beans, corn, and chicken bone broth.
  6. Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 10–15 minutes.
  7. Season with salt and black pepper to taste before removing from heat.
