Ingredients:
- 1 lb lean ground turkey (93% lean)
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen corn
- 4 cups chicken bone broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- salt to taste
- black pepper to taste
Instructions:
- Heat the olive oil in a large Dutch oven or stockpot over medium-high heat.
- Add the ground turkey, breaking it apart with a spatula. Cook until the meat is deeply browned and no longer pink.
- Stir in the diced onion and garlic. Sauté for 3–5 minutes until the onions are translucent and the garlic is fragrant.
- Stir in the chili powder, cumin, and smoked paprika, letting the spices toast for 60 seconds.
- Pour in the diced tomatoes with juice, drained black beans, drained kidney beans, corn, and chicken bone broth.
- Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 10–15 minutes.
- Season with salt and black pepper to taste before removing from heat.
