Ingredients:

  • 1 lb fresh strawberries, hulled and quartered
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream, chilled
  • 1/2 cup sweetened condensed milk
  • 1/4 tsp fine sea salt

Instructions:

  1. Place the quartered strawberries, lemon juice, and honey into a saucepan over medium heat.
  2. Simmer for 8–10 minutes, stirring occasionally, until the berries have broken down and the liquid has reduced by nearly half into a thick, glossy syrup.
  3. Remove the saucepan from heat and stir in the vanilla extract.
  4. Use an immersion blender to puree the strawberry mixture until completely smooth, then let it cool completely in the refrigerator.
  5. In a chilled mixing bowl, combine the heavy whipping cream and fine sea salt.
  6. Using an electric mixer, beat on medium-high speed until stiff peaks form.
  7. Gently fold the chilled strawberry reduction and the sweetened condensed milk into the whipped cream using a silicone spatula until well combined.
  8. Transfer the mixture into an airtight freezer-safe container and freeze for 6 hours or until set.
