Ingredients:
- 1 lb fresh strawberries, hulled and quartered
- 2 tbsp lemon juice
- 2 tbsp honey
- 1 tsp vanilla extract
- 2 cups heavy whipping cream, chilled
- 1/2 cup sweetened condensed milk
- 1/4 tsp fine sea salt
Instructions:
- Place the quartered strawberries, lemon juice, and honey into a saucepan over medium heat.
- Simmer for 8–10 minutes, stirring occasionally, until the berries have broken down and the liquid has reduced by nearly half into a thick, glossy syrup.
- Remove the saucepan from heat and stir in the vanilla extract.
- Use an immersion blender to puree the strawberry mixture until completely smooth, then let it cool completely in the refrigerator.
- In a chilled mixing bowl, combine the heavy whipping cream and fine sea salt.
- Using an electric mixer, beat on medium-high speed until stiff peaks form.
- Gently fold the chilled strawberry reduction and the sweetened condensed milk into the whipped cream using a silicone spatula until well combined.
- Transfer the mixture into an airtight freezer-safe container and freeze for 6 hours or until set.
