Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 8 oz (225g) full-fat cream cheese, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (6g) lemon zest, finely grated
- 3 tbsp (45g) thick lemon curd
- 1/4 tsp (1.5g) fine sea salt
Instructions:
- Beat the softened butter and cream cheese together on medium-high speed for 3–5 minutes until the mixture is pale, fluffy, and completely smooth.
- Turn the mixer to low and gradually add the sifted powdered sugar one cup at a time. Once incorporated, stir in the lemon zest, lemon juice, vanilla, and salt.
- Fold in the lemon curd using a rubber spatula or beat on low for 30 seconds until the frosting is homogeneous, glossy, and holds a soft peak.
