Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tbsp (15g) ground cinnamon
- 1 tsp (2g) ground ginger
- ½ tsp (1g) ground cloves
- 1 cup (245g) pumpkin purée
- ½ cup (120ml) Grade A maple syrup
- ½ cup (120g) plain Greek yogurt
- 2 large eggs
- ⅓ cup (80ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) milk
- ¼ tsp (1g) cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Line a 12x17 inch jelly roll pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves until no clumps remain.
- In a large bowl, whisk the pumpkin purée, maple syrup, Greek yogurt, eggs, melted oil, and vanilla until the mixture is smooth and glossy.
- Fold the dry ingredients into the wet mixture using a spatula. Stir only until just combined to avoid overmixing.
- Spread the batter evenly into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools on a wire rack, whisk together the powdered sugar, maple syrup, milk, and cinnamon in a small bowl until velvety.
- Drizzle the glaze over the slightly warm cake in a zig-zag pattern.
- Allow the glaze to set for 15 minutes before slicing into 24 uniform squares.
