Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 1/4 tsp (1.5g) salt
- 16 oz (450g) full-fat cream cheese, softened to room temperature
- 1/2 cup (60g) powdered sugar, sifted
- 1 tsp (5ml) pure vanilla extract
- 1.25 cups (300ml) heavy whipping cream, chilled
- 1 lb (450g) fresh strawberries, hulled and sliced
- 1/4 cup (50g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) cornstarch dissolved in 1 tbsp (15ml) water
Instructions:
- Combine graham cracker crumbs, melted butter, sugar, and salt in a bowl; stir until it resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan using a measuring cup to pack it tight.
- Place the pan in the freezer for 10 minutes to flash-set the crust.
- Beat the softened cream cheese and powdered sugar together until completely smooth.
- Stir in the vanilla extract.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture using a spatula with a fold-and-turn motion.
- Spread the filling evenly over the chilled crust and smooth the top.
- Place sliced strawberries, sugar, and lemon juice in a saucepan over medium heat and simmer for 5–8 minutes until berries soften.
- Stir in the cornstarch slurry and simmer until the glaze thickens.
- Pour the glaze over the cheesecake and refrigerate for at least 6 hours.
