Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 3 tbsp (42g) melted unsalted butter
- 1 tbsp (12g) maple syrup
- 15 oz (425g) 100% pure pumpkin puree
- 8 oz (225g) softened light cream cheese
- 0.5 cup (120g) plain Greek yogurt
- 1/3 cup (80ml) pure maple syrup
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (0.5g) ground nutmeg
- 0.25 tsp (1.5g) fine sea salt
- 1 tsp (5ml) vanilla extract
- 1 cup (240ml) chilled coconut cream
- 1 tbsp (12g) powdered maple sugar
Instructions:
- Combine the graham cracker crumbs, melted butter, and 1 tbsp maple syrup in a small bowl and stir until the mixture resembles wet sand.
- Press the crust mixture firmly into the bottom and up the sides of a 9-inch pie plate using the bottom of a measuring cup.
- Place the crust in the freezer for 10 minutes to lock in the structure.
- In a large bowl, beat the softened light cream cheese until smooth and airy.
- Gradually fold in the Greek yogurt and 1/3 cup maple syrup until no lumps remain.
- Stir in the pumpkin puree, cinnamon, ginger, nutmeg, salt, and vanilla extract.
- Mix on low speed until the color is a uniform mahogany, then pour into the chilled crust.
- Refrigerate the pie for at least 6 hours to allow the filling to set.
- Whip the chilled coconut cream with powdered maple sugar and spread over the set pie before serving.
