Ingredients:

  • 6 large baking apples, peeled and sliced (approx. 3 lbs)
  • 1 tbsp fresh lemon juice
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 3 cups whole wheat breadcrumbs
  • 4 tbsp unsalted butter, melted
  • 3 tbsp coconut sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions:

  1. Peel, core, and slice apples into 1/4 inch wedges. In a large bowl, toss the slices with lemon juice, maple syrup, cinnamon, nutmeg, and salt. Let sit for 5 minutes.
  2. Heat a medium skillet over medium heat. Add breadcrumbs and toast, stirring constantly, until they smell nutty and turn a light golden brown.
  3. Remove crumbs from heat and stir in melted butter, coconut sugar, cinnamon, and salt until evenly coated and clumpy.
  4. Preheat oven to 350°F (175°C).
  5. Pour half of the spiced apple mixture into an 8x8 inch baking dish, spreading evenly. Sprinkle half of the toasted crumbs over the top.
  6. Repeat with the remaining apples and finish with the remaining crumbs.
  7. Bake for 40-45 minutes, or until the topping is a deep mahogany-color and the apple juices are bubbling up the sides.
