Ingredients:
- 6 large baking apples, peeled and sliced (approx. 3 lbs)
- 1 tbsp fresh lemon juice
- 2 tbsp maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 3 cups whole wheat breadcrumbs
- 4 tbsp unsalted butter, melted
- 3 tbsp coconut sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
Instructions:
- Peel, core, and slice apples into 1/4 inch wedges. In a large bowl, toss the slices with lemon juice, maple syrup, cinnamon, nutmeg, and salt. Let sit for 5 minutes.
- Heat a medium skillet over medium heat. Add breadcrumbs and toast, stirring constantly, until they smell nutty and turn a light golden brown.
- Remove crumbs from heat and stir in melted butter, coconut sugar, cinnamon, and salt until evenly coated and clumpy.
- Preheat oven to 350°F (175°C).
- Pour half of the spiced apple mixture into an 8x8 inch baking dish, spreading evenly. Sprinkle half of the toasted crumbs over the top.
- Repeat with the remaining apples and finish with the remaining crumbs.
- Bake for 40-45 minutes, or until the topping is a deep mahogany-color and the apple juices are bubbling up the sides.
