Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1 tsp smoked paprika
- 1 puck (5.3 oz) Boursin Garlic & Fine Herbs cheese
- 1/2 cup low-sodium chicken broth
- 2 cups fresh baby spinach
- 1/2 cup cherry tomatoes, halved
- 1 tbsp fresh lemon juice
Instructions:
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels to ensure a better sear.
- Rub the chicken with olive oil, then coat evenly with salt, pepper, and smoked paprika.
- Place the chicken in a 9x13 inch baking dish, leaving a small gap in the center.
- Pour the chicken broth into the bottom of the dish around the chicken.
- Place the entire puck of Boursin cheese directly in the center of the dish and scatter the halved cherry tomatoes around the cheese.
- Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is softened and bubbling.
- Remove the dish from the oven. Use a spoon to mash the Boursin cheese and stir it into the chicken broth to create a creamy sauce.
- Fold in the fresh baby spinach until wilted by the residual heat.
- Drizzle with fresh lemon juice to finish.
