Ingredients:
- 2 cups (200g) graham cracker crumbs
- 4 tbsp (57g) melted unsalted butter
- 8 oz (225g) softened cream cheese
- 1 cup (240ml) heavy whipping cream, chilled
- 1/2 cup (100g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) fresh strawberries, finely diced
- 2 tbsp (25g) granulated sugar
- 1 tsp (5ml) lemon juice
Instructions:
- Combine the graham cracker crumbs and melted butter in a small bowl. Stir until the mixture resembles wet sand. Divide evenly among the 10 cups, pressing down lightly with the back of a spoon to create a firm foundation.
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Slowly pour in the heavy whipping cream and vanilla extract. Beat on high speed until stiff peaks form.
- In a separate bowl, toss the diced strawberries with granulated sugar and lemon juice. Let them sit for 5-10 minutes until a natural, glossy syrup forms around the fruit.
- Spoon or pipe the cream cheese filling over the crust, smoothing the top with a knife. Top each cup with a generous portion of the macerated strawberries.
