Ingredients:

  • 2 cups (200g) graham cracker crumbs
  • 4 tbsp (57g) melted unsalted butter
  • 8 oz (225g) softened cream cheese
  • 1 cup (240ml) heavy whipping cream, chilled
  • 1/2 cup (100g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) fresh strawberries, finely diced
  • 2 tbsp (25g) granulated sugar
  • 1 tsp (5ml) lemon juice

Instructions:

  1. Combine the graham cracker crumbs and melted butter in a small bowl. Stir until the mixture resembles wet sand. Divide evenly among the 10 cups, pressing down lightly with the back of a spoon to create a firm foundation.
  2. In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Slowly pour in the heavy whipping cream and vanilla extract. Beat on high speed until stiff peaks form.
  3. In a separate bowl, toss the diced strawberries with granulated sugar and lemon juice. Let them sit for 5-10 minutes until a natural, glossy syrup forms around the fruit.
  4. Spoon or pipe the cream cheese filling over the crust, smoothing the top with a knife. Top each cup with a generous portion of the macerated strawberries.
