Ingredients:

  • 1 box (15.25 oz) Red Velvet Cake Mix
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup white chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a standard 13x18 inch rimmed baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk the two eggs and melted butter together until completely smooth and emulsified.
  3. Gradually fold in the boxed red velvet cake mix using a spatula. Mix until no dry streaks remain.
  4. Gently stir in the white chocolate chips until evenly distributed.
  5. Scoop rounded tablespoons of dough (about 1.5 inches in diameter) onto the prepared sheet, spacing them 2 inches apart.
  6. Bake for 8–10 minutes. Remove the cookies when the edges are set but the centers still look slightly underdone and soft.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to finish setting.
