Ingredients:
- 1 box (15.25 oz) Red Velvet Cake Mix
- 2 large eggs
- 1/2 cup unsalted butter, melted and slightly cooled
- 1 cup white chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line a standard 13x18 inch rimmed baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, whisk the two eggs and melted butter together until completely smooth and emulsified.
- Gradually fold in the boxed red velvet cake mix using a spatula. Mix until no dry streaks remain.
- Gently stir in the white chocolate chips until evenly distributed.
- Scoop rounded tablespoons of dough (about 1.5 inches in diameter) onto the prepared sheet, spacing them 2 inches apart.
- Bake for 8–10 minutes. Remove the cookies when the edges are set but the centers still look slightly underdone and soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to finish setting.
