Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 14 oz sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 14 oz honey graham crackers
  • 1 lb fresh strawberries, sliced
  • 1/2 cup heavy whipping cream, for garnish
  • 100g strawberries, halved for garnish
  • Fresh mint leaves

Instructions:

  1. Beat the softened cream cheese and butter together in a large bowl until pale and airy.
  2. Slowly mix in the sweetened condensed milk and vanilla extract on medium speed until smooth and glossy.
  3. In a separate chilled bowl, whip 1 cup of heavy cream to stiff peaks, then gently fold it into the cream cheese mixture using a spatula.
  4. Place a layer of graham crackers at the bottom of a 9x9 inch pan, breaking pieces to fit corners.
  5. Spread a generous layer of the cream cheese filling over the crackers and top with a tight layer of thinly sliced strawberries.
  6. Repeat the layers of crackers, cream, and strawberries until ingredients are used.
  7. Chill in the refrigerator for at least 4 hours to allow the crackers to soften into a cake-like texture.
  8. Garnish with whipped cream, halved strawberries, and mint leaves before serving.
