Ingredients:

  • 1 lb sirloin steak, thinly sliced against the grain
  • 1 tsp baking soda
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1/4 cup beef broth
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp toasted sesame oil
  • 1 tsp brown sugar
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups broccoli florets
  • 1 cup sliced carrots

Instructions:

  1. Slice the beef into thin strips across the grain. In a bowl, combine the beef with baking soda, soy sauce, cornstarch, and water. Toss until every strip is fully coated and let sit for 20 minutes.
  2. Heat 1 tbsp of oil in a wok until it begins to smoke. Add the beef in a single layer (working in batches if necessary). Sear for 1–2 minutes until mahogany-colored, flip and sear for another minute. Remove beef from the pan and set aside.
  3. Add the remaining oil to the pan. Toss in garlic and ginger, stirring for 15 seconds. Add broccoli and carrots, stir-frying for 3 minutes until vibrant but crisp.
  4. Pour in the stir fry sauce and return the beef to the pan. Toss for 60 seconds until the sauce thickens into a glossy coating.
