Ingredients:
- 1 lb sirloin steak, thinly sliced against the grain
- 1 tsp baking soda
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp water
- 1/4 cup beef broth
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp toasted sesame oil
- 1 tsp brown sugar
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 cups broccoli florets
- 1 cup sliced carrots
Instructions:
- Slice the beef into thin strips across the grain. In a bowl, combine the beef with baking soda, soy sauce, cornstarch, and water. Toss until every strip is fully coated and let sit for 20 minutes.
- Heat 1 tbsp of oil in a wok until it begins to smoke. Add the beef in a single layer (working in batches if necessary). Sear for 1–2 minutes until mahogany-colored, flip and sear for another minute. Remove beef from the pan and set aside.
- Add the remaining oil to the pan. Toss in garlic and ginger, stirring for 15 seconds. Add broccoli and carrots, stir-frying for 3 minutes until vibrant but crisp.
- Pour in the stir fry sauce and return the beef to the pan. Toss for 60 seconds until the sauce thickens into a glossy coating.
