Ingredients:
- 1.5 lbs cod fillets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1 lemon, thinly sliced into rounds
- 2 tbsp fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C). Line a 9x13 inch baking dish with lemon slices to create a citrus-infused base.
- Pat the cod fillets completely dry using paper towels to prevent steaming.
- In a small mixing bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, dried oregano, and paprika.
- Season both sides of the cod fillets with salt and black pepper, then generously coat the top and sides with the lemon garlic marinade.
- Place the coated fillets atop the lemon slices in the prepared baking dish.
- Bake for 12–20 minutes, or until the fish is opaque white and flakes easily with a fork.
- Remove from oven and garnish immediately with fresh chopped parsley.
