Ingredients:

  • 1.5 lbs cod fillets
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1 lemon, thinly sliced into rounds
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C). Line a 9x13 inch baking dish with lemon slices to create a citrus-infused base.
  2. Pat the cod fillets completely dry using paper towels to prevent steaming.
  3. In a small mixing bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, dried oregano, and paprika.
  4. Season both sides of the cod fillets with salt and black pepper, then generously coat the top and sides with the lemon garlic marinade.
  5. Place the coated fillets atop the lemon slices in the prepared baking dish.
  6. Bake for 12–20 minutes, or until the fish is opaque white and flakes easily with a fork.
  7. Remove from oven and garnish immediately with fresh chopped parsley.
