Ingredients:
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- ¾ cup (75g) unsweetened cocoa powder
- 2 tsp (10g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (6g) salt
- 1 cup (240ml) buttermilk, room temperature
- ½ cup (120ml) vegetable oil
- 2 large eggs, room temperature
- 2 tsp (10ml) vanilla extract
- 1 cup (240ml) hot brewed coffee
- 1 cup (250g) unsalted butter, softened
- 1 cup (250g) creamy peanut butter
- 4 cups (500g) powdered sugar
- ¼ cup (60ml) heavy cream
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1.5g) salt
- 4 oz (115g) semi-sweet chocolate, chopped
- ½ cup (120ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C). Grease four 8-inch round cake pans and line the bottoms with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa, baking soda, baking powder, and salt until no clumps remain.
- Add the buttermilk, oil, eggs, and vanilla to the dry ingredients. Mix on medium speed until combined.
- Slowly pour in the hot brewed coffee and mix until smooth. Pour the batter evenly between the four pans.
- Bake for 25-30 minutes until a toothpick inserted in the center comes out with a few moist crumbs. Cool in pans for 10 minutes, then invert onto wire racks to cool completely.
- To make the frosting, beat softened butter and creamy peanut butter together until smooth.
- Gradually mix in powdered sugar, heavy cream, vanilla, and salt until the frosting is light and fluffy.
- Assemble the cake by layering the cooled sponges with the peanut butter frosting between each layer and across the exterior.
- Prepare the ganache by heating heavy cream and pouring it over chopped semi-sweet chocolate. Stir until smooth.
- Pour the ganache over the top of the cake, allowing it to drip down the sides.
- Chill the cake in the refrigerator for 2 hours before slicing and serving.
