Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (190g) natural creamy peanut butter
- 1/2 cup (120ml) pure maple syrup
- 2 large (100g) eggs
- 1 cup (240ml) low-fat buttermilk
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) sea salt
- 1 tsp (5ml) pure vanilla extract
- 4 oz (115g) dark chocolate (70% cocoa)
- 1/4 cup (60ml) unsweetened almond milk
- 2 tbsp (32g) natural peanut butter
- 1 tbsp (15ml) maple syrup
- 3 oz (85g) Reese's Peanut Butter Cups
- 1 pinch (1g) flaky sea salt
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper.
- In a large bowl, whisk together the peanut butter and maple syrup until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract and buttermilk until the mixture is velvety and cohesive.
- Sift the flour, baking powder, and salt into the wet ingredients; gently fold with a spatula until just combined.
- Pour the batter into the prepared pan and bake for 28-32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Prepare the glaze by combining chopped dark chocolate, almond milk, peanut butter, and maple syrup in a microwave-safe bowl.
- Microwave the glaze in 20-second bursts, stirring in between, until smooth and glossy.
- Once the cake has completely cooled, pour the glaze over the top and smooth to the edges.
- Immediately press chopped Reese's cups into the glaze and finish with a sprinkle of flaky sea salt.
